A Crowd Pleaser: Soft Tacos

Are many of you at the end of your rope this vacation? Here's a great idea to keep the kids full of healthy, fun food: interactive-style.

Kids always want to end their vacation with a bang. As much as I love the kids inviting all of their friends over to the house, I found myself with an extra eight mouths to feed this week, and I have to be honest: I was a little perplexed.

How can I stretch out what I had in the fridge and pantry to accommodate all these kids?

Although pizza is a great go-to order when in doubt, sometimes it just isn’t in the cards. Like now, end of February vacation when we’ve been filling the kids days up with with other activities; it adds up!

I decided on soft tacos. What can be better as far as nutrition, and clear out fun for a bunch of kids who want to control their diet, anyway? I bought three pounds of chicken, and a pound of ground beef, seasoned it, and pulled out every manner of pantry item to serve as condiments. It was the perfect plan, delicious, filling-and healthy to boot.

I hope you enjoy these soft tacos as much as we did! Enjoy!

10 flour tortillas
3 lbs chicken breast, cut up into tenderloins
2 T. olive oil
1 pound ground beef
2 T. chili powder
2 T. paprika
1 tsp. Garlic Powder
Salt and pepper to taste
1 Tsp. worcestshire sauce

*Get two pans going on medium heat-one with the chicken tenderloins, one with the beef. Add 1 T. of chili powder, 1 T. of paprika, and 1 tsp. of garlic powder to each. Add 1 tsp of worcetshire sauce to the beef. Add salt and pepper to each, to taste.

*Set up stations of shredded lettuce, sliced olives, onions, peppers and such as condiments.

I was at my son's house in North Carolina and he served tacos buffet style. He put different plates of ingrediants on the tabe and everybody made his/her own taco. Some like more chicken others like the beef. Let them let out the veggies they don't eat.
