Sometimes the best recipes are born out of necessity. I was hankering for tacos, and figured on defrosting a package of burrito wraps to use as the shell. With everything all set to go, I looked for the wraps I knew I had tucked into the back of the freezer. No wraps. Turns out, ‘sandwich night’ took care of of the surplus wraps, which left me scrounging for a Plan B. Sometimes it takes a challenge to discover new recipes. I was asked to create a complete meal for a family member with an unusual set of dietary restrictions, which included lactose and wheat intolerances. I immediately began canceling out dinner ideas from my mental go-to list; this one has cheese, that one has too much sugar and so on. I thought a great meat and potatoes dish would go a long way. Is it hot enough for ya? The most popular people in Danvers these days are those who either have a pool, or know someone that does. We don't have a pool of our own, but I consider us to be 'pool-related,' by definition: to have a pool in the family; and we were expressly thankful for it this past week, so we didn't run the risk of actually melting into and becoming one with the pavement. When the humidity becomes this unbearable, we always venture across town to my father and stepmother’s house so we can cool down in their pool. With back to school obligations happening all at once like back to school clothes shopping, school supply lists and the like, families understandably are stressed to the max. If they are blessed to have multiple children, the stress is magnified.
